Chicken, Pepper & Harissa Orzo

Ingredients

  • 1 cup orzo pasta
  • 2 chicken breasts, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 tbsp harissa paste
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1/2 cup chicken stock
  • fresh parsley, chopped
  • 1 lemon

Instructions

  1. Bring a pot of salted water to a boil.
  2. Add the orzo and cook according to the package instructions (about 8 minutes).
  3. While the orzo cooks, heat the olive oil in a large pan over medium-high heat.
  4. Add the thinly sliced chicken and season with salt and pepper. Cook for 3-4 minutes until browned on both sides.
  5. Add the red bell pepper and minced garlic. Cook for another 2 minutes until the peppers are softened.
  6. Stir in the harissa paste, mixing well to coat the chicken and peppers.
  7. Pour in the chicken stock and let it simmer for 2 minutes, allowing the sauce to slightly thicken.
  8. Add the cooked orzo to the pan and toss everything together to combine.
  9. Taste and adjust seasoning if needed.
  10. Garnish with chopped parsley and serve with lemon wedges.
