Chicken Fajita Salad

Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp chilli powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 4 cups mixed salad greens
- 1/4 cup shredded cheddar
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp honey
- 1/2 tsp cumin
Instructions
- In a bowl, mix the olive oil, lime juice, chilli powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the chicken breasts to the marinade, ensuring they are fully coated.
- Heat a grill pan over medium-high heat. Cook the chicken breasts for 4-5 minutes per side, or until fully cooked through. Once cooked, slice thinly.
- In another pan, add a little olive oil and sauté the sliced bell peppers and red onion for 4-5 minutes until they are softened and slightly charred.
- In a large bowl or platter, arrange the mixed salad greens. Top with the sautéed peppers and onions, sliced chicken, avocado, cherry tomatoes, and grated cheese.
- In a small bowl, whisk together the olive oil, lime juice, honey, cumin, salt, and pepper until well combined.
- Drizzle the salad with the dressing and serve.
