Beef Tostadas

Ingredients
- 8 small corn tortillas
- 450g minced beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp chilli powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup grated cheddar cheese
- 1/4 cup sour cream
- 1 avocado, diced
- 1/4 cup chopped fresh coriander
- 1 lime
- hot sauce
Instructions
- Preheat your oven to 200°C.
- Brush both sides of the corn tortillas with a little olive oil and place them on a baking sheet.
- Bake in the preheated oven for about 5-7 minutes per side, or until they are golden brown and crispy.
- In a large pan, heat 1 tablespoon of olive oil over medium-high heat.
- Add the finely chopped onion and cook for about 2 minutes until softened.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Add the ground beef to the pan and cook, breaking it up with a spoon, until it is no longer pink.
- Stir in the chilli powder, ground cumin, smoked paprika, salt, and pepper. Cook for another 2-3 minutes until the beef is well-seasoned and cooked through. Remove from heat.
- Place the crispy tortillas on serving plates.
- Top each tortilla with a generous spoonful of the cooked beef mixture.
- Add shredded lettuce, diced tomatoes, chopped cheddar cheese, diced avocado, and chopped fresh coriander.
- Add a dollop of sour cream on top of each tostada.
- Serve with lime wedges on the side and hot sauce.
