Beef Tostadas

Ingredients

  • 8 small corn tortillas
  • 450g minced beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup grated cheddar cheese
  • 1/4 cup sour cream
  • 1 avocado, diced
  • 1/4 cup chopped fresh coriander
  • 1 lime
  • hot sauce

Instructions

  1. Preheat your oven to 200°C.
  2. Brush both sides of the corn tortillas with a little olive oil and place them on a baking sheet.
  3. Bake in the preheated oven for about 5-7 minutes per side, or until they are golden brown and crispy.
  4. In a large pan, heat 1 tablespoon of olive oil over medium-high heat.
  5. Add the finely chopped onion and cook for about 2 minutes until softened.
  6. Add the minced garlic and cook for another 30 seconds until fragrant.
  7. Add the ground beef to the pan and cook, breaking it up with a spoon, until it is no longer pink.
  8. Stir in the chilli powder, ground cumin, smoked paprika, salt, and pepper. Cook for another 2-3 minutes until the beef is well-seasoned and cooked through. Remove from heat.
  9. Place the crispy tortillas on serving plates.
  10. Top each tortilla with a generous spoonful of the cooked beef mixture.
  11. Add shredded lettuce, diced tomatoes, chopped cheddar cheese, diced avocado, and chopped fresh coriander.
  12. Add a dollop of sour cream on top of each tostada.
  13. Serve with lime wedges on the side and hot sauce.
