BBQ Chicken Tacos with Homemade Slaw
These BBQ Chicken Tacos with Homemade Slaw are an absolute winner in my house. Vibrant colour and incredible flavour, they’re the perfect midweek treat.

Ingredients
- 2 large chicken breasts
- 1 cup BBQ sauce
- 1 tbsp olive oil
- 1 tsp paprika
- 2 cups shredded cabbage (use a mix of red and green cabbage for colour)
- 1 medium carrot, shredded
- 1/2 red onion, thinly sliced
- 1/4 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp sugar
- 8 small tortillas
- fresh coriander for garnish
- lime wedges for serving
Instructions
- Butterfly the chicken breasts (slice horizontally and open up) and season with salt, pepper, and paprika.
- In a pan, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown on each side, about 4 minutes per side.
- Whilst the chicken is cooking, in a large bowl, mix the shredded cabbage, carrot, and red onion.
- In another bowl, mix together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper.
- Pour the dressing over the cabbage mixture and toss well to coat. Adjust the seasoning as needed.
- Make sure that the chicken is fully cooked, then remove from the pan. Shred it using two forks.
- Return the shredded chicken to the pan, add the BBQ sauce, and stir to combine. Cook on low heat for 2 minutes until the chicken is thoroughly coated and the sauce is heated through.
- Heat the tortillas in a pan over medium heat or in the microwave for 30 seconds.
- Spoon the BBQ chicken onto each tortilla and top with a spoonful of slaw.
- Sprinkle fresh coriander over the top and serve with a wedge of lime on the side.
