Asian Beef Lettuce Wraps

Ingredients
- 450g ground beef
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 3 tbsp soy sauce
- 2 tbsp hoisin sauce
- 1 tsp sesame oil
- 1 tbsp rice vinegar
- 1/2 tsp red pepper flakes
- 3 spring onions, thinly sliced
- 1/2 cup water chestnuts, finely chopped
- 1 medium carrot, grated
- 8-12 lettuce leaves (such as butter lettuce, iceberg, or romaine)
- fresh coriander, for garnish
- 1 lime, wedges

Instructions
- Heat a large pan over medium-high heat. Add the ground beef, breaking it up with a spoon, and cook until browned.
- Drain any excess fat and return the pan to the heat.
- Add the minced garlic and ginger with the beef and sauté for about 1 minute until fragrant.
- Stir in soy sauce, hoisin sauce, sesame oil, and rice vinegar. Add the red pepper flakes.
- Add the chopped spring onions, water chestnuts, and grated carrot to the beef mixture. Cook for another 2-3 minutes, stirring frequently, until the vegetables are just tender.
- Wash and dry the lettuce leaves. Arrange them on a platter.
- Spoon the hot beef mixture into the centre of each lettuce leaf.
- Garnish with coriander sprigs and serve with lime wedges.
