Instructions

  1. Heat a large pan over medium-high heat. Add the ground beef, breaking it up with a spoon, and cook until browned.
  2. Drain any excess fat and return the pan to the heat.
  3. Add the minced garlic and ginger with the beef and sauté for about 1 minute until fragrant.
  4. Stir in soy sauce, hoisin sauce, sesame oil, and rice vinegar. Add the red pepper flakes.
  5. Add the chopped spring onions, water chestnuts, and grated carrot to the beef mixture. Cook for another 2-3 minutes, stirring frequently, until the vegetables are just tender.
  6. Wash and dry the lettuce leaves. Arrange them on a platter.
  7. Spoon the hot beef mixture into the centre of each lettuce leaf.
  8. Garnish with coriander sprigs and serve with lime wedges.
