Masala Omelette
This Masala Omelette recipe combines one of my favourite types of cuisine with a very simple meal.

Ingredients
- 2 large eggs
- 1 small onion, finely chopped
- 1 small tomato, finely chopped
- 1 green chilli, finely chopped
- fresh coriander leaves, finely chopped
- 1/4 tsp turmeric powder
- 1/4 tsp red chilli powder
- 1/4 tsp cumin powder
- 1-2 tbsp cooking oil or butter
Instructions
- In a bowl, crack open the eggs and whisk them well. Add the turmeric powder, red chilli powder, cumin powder, salt, and pepper. Whisk until the spices are well mixed into the eggs.
- Heat a non-stick pan over medium heat and add 1-2 tablespoons of oil or butter. Add the chopped onions, tomatoes, green chilli, and coriander and sauté for a couple minutes.
- Pour the egg mixture into the pan, spreading it evenly.
- Mix everything well so the vegetables are evenly distributed.
- Let the omelette cook undisturbed for 2-3 minutes or until the edges start to lift and the bottom is golden. Flip the omelette carefully and cook for another 1-2 minutes on the other side until fully cooked.
- Slide the Masala Omelette onto a plate and serve.
