Masala Omelette

This Masala Omelette recipe combines one of my favourite types of cuisine with a very simple meal.

Ingredients

  • 2 large eggs
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 green chilli, finely chopped
  • fresh coriander leaves, finely chopped
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chilli powder
  • 1/4 tsp cumin powder
  • 1-2 tbsp cooking oil or butter

Instructions

  1. In a bowl, crack open the eggs and whisk them well. Add the turmeric powder, red chilli powder, cumin powder, salt, and pepper. Whisk until the spices are well mixed into the eggs.
  2. Heat a non-stick pan over medium heat and add 1-2 tablespoons of oil or butter. Add the chopped onions, tomatoes, green chilli, and coriander and sauté for a couple minutes. 
  3. Pour the egg mixture into the pan, spreading it evenly.
  4. Mix everything well so the vegetables are evenly distributed.
  5. Let the omelette cook undisturbed for 2-3 minutes or until the edges start to lift and the bottom is golden. Flip the omelette carefully and cook for another 1-2 minutes on the other side until fully cooked.
  6. Slide the Masala Omelette onto a plate and serve.
