Blue Cheese and Caramelised Onion Steak Sandwich

Ingredients

  • 1 medium-sized sirloin steak
  • 1 French baguette or ciabatta, sliced in half lengthwise
  • 1 medium onion, sliced
  • 1/4 cup blue cheese, crumbled
  • 1 cup fresh rocket
  • 1-2 tablespoons balsamic glaze
  • 1 tbsp olive oil

Instructions

  1. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 8-10 minutes until the onions are golden brown and caramelised. 
  2. Season the sirloin steak with salt and pepper on both sides. Heat another pan over medium-high heat with some oil. Cook the steak for 1-3 minutes on each side, or until it reaches your desired level of doneness. 
  3. Let the steak rest, then slice it thinly against the grain.
  4. Spread the caramelised onions on the bottom half of the sliced baguette or ciabatta. Layer the thinly sliced steak over the onions.
  5. Sprinkle the crumbled blue cheese over the steak. Add a generous handful of fresh rocket on top.
  6. Drizzle balsamic glaze over the rocket.
