Sweet Potato Black Bean Tacos

I love these Sweet Potato Black Bean Tacos, not just because they taste great, but because they also don’t need many ingredients to make a great dish.

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 8 small tortillas (corn or flour)
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • 1/2 cup salsa

Instructions

  1. Place the diced sweet potatoes in a microwave-safe bowl with a splash of water. Cover and microwave on high for 4 minutes, or until they are slightly soft.
  2. Transfer the microwaved sweet potatoes to the air fryer basket. Drizzle with a little olive oil, salt, and pepper, then air fry at 200°C for 5 minutes, shaking halfway through, until crispy and golden.
  3. While the sweet potatoes are cooking, warm the tortillas in the microwave for 15-20 seconds until soft and pliable.
  4. Fill each tortilla with a portion of the crispy sweet potatoes, black beans, avocado slices, and a spoonful of salsa.
  5. Squeeze fresh lime juice over the tacos and serve immediately with additional lime wedges on the side.
