Sweet Potato Black Bean Tacos
I love these Sweet Potato Black Bean Tacos, not just because they taste great, but because they also don’t need many ingredients to make a great dish.

Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 can black beans, drained and rinsed
- 8 small tortillas (corn or flour)
- 1 avocado, sliced
- 1 lime, cut into wedges
- 1/2 cup salsa
Instructions
- Place the diced sweet potatoes in a microwave-safe bowl with a splash of water. Cover and microwave on high for 4 minutes, or until they are slightly soft.
- Transfer the microwaved sweet potatoes to the air fryer basket. Drizzle with a little olive oil, salt, and pepper, then air fry at 200°C for 5 minutes, shaking halfway through, until crispy and golden.
- While the sweet potatoes are cooking, warm the tortillas in the microwave for 15-20 seconds until soft and pliable.
- Fill each tortilla with a portion of the crispy sweet potatoes, black beans, avocado slices, and a spoonful of salsa.
- Squeeze fresh lime juice over the tacos and serve immediately with additional lime wedges on the side.
