Mango Prawn Stir-Fry Noodles

Ingredients
- 450g prawns, peeled and deveined
- 1 ripe mango, peeled and diced
- 1 red bell pepper, sliced
- 1/2 onion, sliced
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 225g rice noodles
Instructions
- Cook the rice noodles according to the package instructions.
- Heat 1 tablespoon of olive oil in a large pan or wok over medium-high heat. Add the sliced bell pepper and onion, and sauté for 2-3 minutes until softened.
- Add the remaining tablespoon of olive oil to the pan, then add the prawns. Cook for 2-3 minutes, stirring frequently, until the shrimp turn pink and are cooked through.
- Add the diced mango and soy sauce to the pan.
- Stir-fry everything together for an additional 2 minutes, until the mango is warmed through but still slightly firm.
- Remove from heat and serve hot over rice or noodles, or enjoy on its own as a light, fresh dish.
