Ingredients

  • 450g prawns, peeled and deveined
  • 1 ripe mango, peeled and diced
  • 1 red bell pepper, sliced
  • 1/2 onion, sliced
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 225g rice noodles

Instructions

  1. Cook the rice noodles according to the package instructions.
  2. Heat 1 tablespoon of olive oil in a large pan or wok over medium-high heat. Add the sliced bell pepper and onion, and sauté for 2-3 minutes until softened.
  3. Add the remaining tablespoon of olive oil to the pan, then add the prawns. Cook for 2-3 minutes, stirring frequently, until the shrimp turn pink and are cooked through.
  4. Add the diced mango and soy sauce to the pan.
  5. Stir-fry everything together for an additional 2 minutes, until the mango is warmed through but still slightly firm.
  6. Remove from heat and serve hot over rice or noodles, or enjoy on its own as a light, fresh dish.
