Tomato & Bacon Gnocchi

Ingredients

  • 500g potato gnocchi
  • 150g bacon, chopped into small pieces
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup fresh cherry tomatoes
  • 1 tbsp tomato paste
  • 50g Parmesan cheese, grated
  • 2 large handfuls of fresh rocket
  • fresh basil leaves, for garnish

Instructions

  1. Heat a large pan over medium heat and add the chopped bacon. Cook until crispy, about 5 minutes. Remove the bacon from the pan and set it aside, leaving the bacon fat in the pan.
  2. Add the olive oil to the pan with the bacon fat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the cherry tomatoes and tomato paste. Season with salt and pepper.
  4. Cook for a couple minutes, stirring occasionally, until the tomatoes become softer.
  5. Meanwhile, bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions (usually 2-3 minutes or until they float to the surface). Drain and add to the pan with the tomato sauce.
  6. Toss the gnocchi in the tomato sauce until well coated. Stir in the crispy bacon and half of the grated Parmesan cheese.
  7. Plate the gnocchi and top with fresh rocket. Garnish with the remaining Parmesan cheese and fresh basil leaves.
