Salmon with Spicy Sesame Noodles

Ingredients
- 2 salmon fillets
- 1 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tsp honey
- 1 clove garlic, minced
- 1/2 tsp red pepper flakes
- 200g noodles
- 2 tbsp tahini
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp sriracha or chilli sauce
- 1 tsp honey or maple syrup
- 1 clove garlic, minced
- 1 tsp grated ginger
- 150g tenderstem broccoli, cut into bite-sized pieces
- 2 spring onions, sliced
- 1 tbsp sesame seeds
Instructions
- In a small bowl, mix the soy sauce, tbsp sesame oil, honey, minced garlic, red pepper flakes, salt, and pepper.
- Marinate the salmon fillets in the mixture.
- Heat a non-stick pan over medium heat. Cook the salmon for 3 minutes on each side. Set aside.
- Boil the noodles according to the package instructions.
- In the same pan used for the salmon, add a little sesame oil if needed. Add the tenderstem broccoli and sauté over medium heat for 3 minutes or until tender and slightly charred. Remove from the pan and set aside.
- In a bowl, whisk together tahini, soy sauce, rice vinegar, sesame oil, sriracha, honey, minced garlic, and grated ginger until smooth.
- Toss the cooked noodles with the spicy sesame sauce. Add the sautéed tenderstem broccoli and sliced green onions. Mix well.
- Plate the noodles and top with the cooked salmon. Garnish with sesame seeds.
