Salmon with Spicy Sesame Noodles

Ingredients

  • 2 salmon fillets
  • 1 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tsp honey
  • 1 clove garlic, minced
  • 1/2 tsp red pepper flakes 
  • 200g noodles
  • 2 tbsp tahini
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp sriracha or chilli sauce 
  • 1 tsp honey or maple syrup
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • 150g tenderstem broccoli, cut into bite-sized pieces
  • 2 spring onions, sliced
  • 1 tbsp sesame seeds

Instructions

  1. In a small bowl, mix the soy sauce, tbsp sesame oil, honey, minced garlic, red pepper flakes, salt, and pepper.
  2. Marinate the salmon fillets in the mixture.
  3. Heat a non-stick pan over medium heat. Cook the salmon for 3 minutes on each side. Set aside.
  4. Boil the noodles according to the package instructions.
  5. In the same pan used for the salmon, add a little sesame oil if needed. Add the tenderstem broccoli and sauté over medium heat for 3 minutes or until tender and slightly charred. Remove from the pan and set aside.
  6. In a bowl, whisk together tahini, soy sauce, rice vinegar, sesame oil, sriracha, honey, minced garlic, and grated ginger until smooth.
  7. Toss the cooked noodles with the spicy sesame sauce. Add the sautéed tenderstem broccoli and sliced green onions. Mix well.
  8. Plate the noodles and top with the cooked salmon. Garnish with sesame seeds.
