Ingredients
- 250g pork mince
- 100g mushrooms, sliced
- 1 pouch of microwave jasmine rice
- 2 tbsp hoisin sauce
- 1 tbsp soy sauce
- 1 tbsp vegetable oil
- 1 clove garlic, minced
- 1/2 tsp ginger, grated
- 1/2 red bell pepper, thinly sliced
- 1/2 cup sugar snap peas, halved
- 1 spring onion, finely chopped
- 1 tbsp sesame seeds
- fresh coriander, chopped
- 1 lime, wedges for serving
Instructions
- In a large pan, heat the vegetable oil over medium-high heat. Add the pork mince and cook, breaking it up with a spoon, until browned, about 3-4 minutes.
- Add the minced garlic, grated ginger, sliced mushrooms, red bell pepper, and sugar snap peas. Stir-fry for an additional 3 minutes until the vegetables are tender.
- Stir in the hoisin sauce and soy sauce, coating the pork and vegetables well. Cook for another minute until everything is well combined and heated through.
- While the pork and vegetables are cooking, microwave the jasmine rice according to the packet instructions.
- Divide the cooked rice between two bowls. Top with the hoisin pork and vegetable mixture. Garnish with chopped spring onions, sesame seeds, and fresh coriander.
- Serve with lime wedges on the side.
