Chorizo & Cherry Tomato Spaghetti

Ingredients

  • 200g spaghetti
  • 150g chorizo, sliced or diced
  • 250g cherry tomatoes, halved
  • 3 garlic cloves, thinly sliced
  • 1 small red onion, finely chopped
  • 2 tbsp olive oil
  • fresh basil leaves, roughly torn (optional, for garnish)
  • grated Parmesan cheese, for serving

Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water.
  2. In a large pan, heat the olive oil over medium heat. Add the chorizo slices and cook until they start to crisp up and release their oil, about 3 minutes.
  3. Add the chopped red onion and sliced garlic to the pan with the chorizo. Sauté until the onion is soft and the garlic is fragrant, about 2-3 minutes.
  4. Add the halved cherry tomatoes to the pan. Season with salt and pepper. 
  5. Cook until the tomatoes begin to soften and release their juices, about 5 minutes. If the mixture is too dry, add a splash of the reserved pasta water.
  6. Add the cooked spaghetti to the pan and toss to combine with the chorizo and tomato mixture. Add more reserved pasta water, if needed, to create a light sauce that coats the spaghetti.
  7. Garnish with freshly torn basil leaves and a generous amount of grated Parmesan cheese.
