Lamb & Pistachio Tagine with Couscous

Ingredients
- 500g lamb mince
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp paprika
- 1/4 tsp ground allspice
- 1/4 tsp cayenne pepper
- can of chopped tomatoes
- 2 tbsp tomato paste
- 1 tbsp honey
- pistachios, roughly chopped
- 1 tbsp olive oil
- fresh parsley or coriander
- 200g couscous
- 1 tbsp olive oil
Instructions
- In a large bowl, combine the couscous with olive oil and a pinch of salt. Pour over boiling water.
- Cover with a plate or cling film and let it sit for about 5-10 minutes until the liquid is absorbed. Fluff the couscous with a fork to separate the grains.
- Heat the olive oil in a large pan over medium heat. Add the chopped onion and cook until softened and translucent, about 2 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the lamb mince to the pan, breaking it up with a spoon, and cook until browned and fully cooked, about 5-7 minutes.
- Add cumin, cinnamon, coriander, turmeric, paprika, allspice, and cayenne pepper to the lamb mixture. Stir well to coat the lamb with spices.
- Pour in the chopped tomatoes and tomato paste. Stir to combine.
- Add honey, salt, and pepper and stir in the roughly chopped pistachios.
- Serve the lamb mixture over the prepared couscous. Garnish with fresh parsley or coriander.
