Saag Aloo with Peas and Pitta

Ingredients

  • 2 large potatoes, peeled and cubed
  • 4 cups fresh spinach, washed and chopped
  • 1 cup frozen peas
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp garam masala
  • 1/2 tsp chilli powder
  • 1 lemon
  • 4 pitta breads, warmed

Instructions

  1. Add the cubed potatoes to a bowl and cook in the microwave for 6-8 minutes until tender.
  2. In a large pan, heat the vegetable oil over medium heat. Add the cumin seeds and mustard seeds, allowing them to sizzle for about 30 seconds until fragrant.
  3. Add the chopped onion, and sauté until golden brown, about 3 minutes.
  4. Stir in the minced garlic and grated ginger, and cook for another 2 minutes.
  5. Add the turmeric, ground coriander, ground cumin, garam masala, and chilli powder to the pan. Stir well to coat the onions and cook for 1 minute.
  6. Add the chopped spinach, stirring to combine with the spices. Cook until the spinach wilts, about 2 minutes.
  7. Add the cooked potatoes and frozen peas to the pan. Stir well to combine all the ingredients.
  8. Cook for another few minutes. Add salt to taste.
  9. Squeeze the juice of half a lemon over the saag aloo, and stir to mix.
  10. Warm the pitta breads in a dry pan or toaster.
  11. Serve the saag aloo with the warmed pitta breads on the side.
