Saag Aloo with Peas and Pitta

Ingredients
- 2 large potatoes, peeled and cubed
- 4 cups fresh spinach, washed and chopped
- 1 cup frozen peas
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp garam masala
- 1/2 tsp chilli powder
- 1 lemon
- 4 pitta breads, warmed
Instructions
- Add the cubed potatoes to a bowl and cook in the microwave for 6-8 minutes until tender.
- In a large pan, heat the vegetable oil over medium heat. Add the cumin seeds and mustard seeds, allowing them to sizzle for about 30 seconds until fragrant.
- Add the chopped onion, and sauté until golden brown, about 3 minutes.
- Stir in the minced garlic and grated ginger, and cook for another 2 minutes.
- Add the turmeric, ground coriander, ground cumin, garam masala, and chilli powder to the pan. Stir well to coat the onions and cook for 1 minute.
- Add the chopped spinach, stirring to combine with the spices. Cook until the spinach wilts, about 2 minutes.
- Add the cooked potatoes and frozen peas to the pan. Stir well to combine all the ingredients.
- Cook for another few minutes. Add salt to taste.
- Squeeze the juice of half a lemon over the saag aloo, and stir to mix.
- Warm the pitta breads in a dry pan or toaster.
- Serve the saag aloo with the warmed pitta breads on the side.
