Ingredients
- 340g pasta
- 2 ripe avocados, peeled and pitted
- 1 cup frozen peas, thawed
- 1/2 cup fresh mint leaves, chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1 lemon
- grated Parmesan cheese
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
- In a blender or food processor, combine the avocados, garlic, olive oil, lemon juice, half of the mint leaves, and a pinch of salt and pepper.
- Blend until smooth and creamy. If the sauce is too thick, add a little reserved pasta water.
- In a large mixing bowl, toss the cooked pasta with the avocado sauce until evenly coated.
- Add the thawed peas and the remaining chopped mint to the pasta, mixing well.
- Taste the pasta and adjust the seasoning with more salt, pepper, or lemon juice if needed.
- Serve immediately, garnished with additional mint leaves and grated Parmesan cheese.
