Ingredients

  • 340g pasta
  • 2 ripe avocados, peeled and pitted
  • 1 cup frozen peas, thawed
  • 1/2 cup fresh mint leaves, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 lemon
  • grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. 
  2. In a blender or food processor, combine the avocados, garlic, olive oil, lemon juice, half of the mint leaves, and a pinch of salt and pepper.
  3. Blend until smooth and creamy. If the sauce is too thick, add a little reserved pasta water.
  4. In a large mixing bowl, toss the cooked pasta with the avocado sauce until evenly coated.
  5. Add the thawed peas and the remaining chopped mint to the pasta, mixing well.
  6. Taste the pasta and adjust the seasoning with more salt, pepper, or lemon juice if needed.
  7. Serve immediately, garnished with additional mint leaves and grated Parmesan cheese.
