Ingredients

  • 2 cups cooked jasmine rice (preferably chilled)
  • 2 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp red Thai curry paste
  • 1 small carrot, diced
  • 1 red bell pepper, diced
  • 1/2 cup frozen peas
  • 1/2 cup coconut milk
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1 lime, cut into wedges
  • 2 eggs

Instructions

  1. Ensure that your jasmine rice is cooked and chilled, as cold rice works best for fried rice.
  2. Heat the vegetable oil in a large pan or wok over medium heat.
  3. Add the chopped onion and cook for 2 minutes until softened.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the red Thai curry paste to the pan and cook, stirring constantly, for about 1-2 minutes.
  6. Add the diced carrot and red bell pepper to the pan. Cook for 3 minutes until the vegetables begin to soften.
  7. Stir in the frozen peas and cook for another 2 minutes.
  8. Add the chilled jasmine rice to the pan and stir to combine with the vegetables and curry paste.
  9. Pour in the coconut milk, soy sauce, fish sauce, and sugar. Stir everything together until the rice is evenly coated with the sauce.
  10. Push the rice mixture to one side of the pan, then pour the beaten eggs into the empty side.
  11. Scramble the eggs until fully cooked, then mix them into the rice.
  12. Cook the fried rice for an additional minute, stirring occasionally, until everything is heated through and well combined.
