Creamy Mushroom and Spinach Toast

Try this Creamy Mushroom and Spinach Toast for a simple meal that has two of my all-time favourite ingredients – spinach and mushrooms.

Ingredients

  • 4 slices of whole-grain or sourdough bread
  • 2 tbsp olive oil or butter
  • 1/4 cup heavy cream
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 225g mushrooms, sliced
  • 2 cups fresh spinach leaves
  • 1/4 tsp dried thyme
  • 1/4 cup grated Parmesan cheese or crumbled feta
  • fresh parsley or chives for garnish

Instructions

  1. Lightly toast the slices of bread in a toaster or on a grill pan until golden and crispy. Set aside.
  2. In a large pan, heat the olive oil or butter over medium heat.
  3. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the sliced mushrooms to the pan and cook for 5 minutes, stirring occasionally, until the mushrooms are browned and softened.
  5. Stir in the fresh spinach leaves and cook until wilted, about 2 minutes.
  6. Reduce the heat to low and pour in the heavy cream or half-and-half.
  7. Stir in the grated Parmesan cheese and let the mixture simmer for 2 minutes until the sauce thickens slightly.
  8. Season with salt and pepper to taste.
  9. Spoon the creamy mushroom and spinach mixture over the toasted bread slices.
  10. Garnish with fresh parsley or thyme.
