Peach and Burrata Salad

Ingredients

  • 2 ripe peaches, pitted and sliced
  • 1 ball of burrata cheese
  • 4 cups mixed greens (rocket, spinach, or any salad mix)
  • 1/4 cup toasted almonds, sliced
  • 1/4 cup fresh basil leaves
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp balsamic glaze

Instructions

  1. Wash and dry the mixed greens and basil leaves.
  2. Pit and slice the peaches into thin wedges.
  3. Toast the almonds in a dry pan over medium heat until golden brown and fragrant. Set aside to cool.
  4. On a large serving plate or salad bowl, arrange the mixed greens as a base.
  5. Place the sliced peaches on top of the greens.
  6. Tear the burrata cheese into smaller pieces and distribute evenly over the salad.
  7. Sprinkle the toasted almonds and fresh basil leaves over the top.
  8. Drizzle the extra-virgin olive oil evenly over the salad.
  9. Add a drizzle of balsamic glaze.
  10. Season with salt and pepper to taste.
