Simple Sweet and Sour Chicken
You can’t beat a Simple Sweet and Sour Chicken for a midweek meal and this one is incredibly easy to cook up.

Ingredients
- 450g chicken breast, cut into bite-sized pieces
- 2 tbsp cornstarch
- 2 tbsp vegetable oil
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1/2 cup pineapple juice (from canned pineapple chunks)
- 1 tbsp cornstarch mixed with 2 tablespoons water
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1/2 cup pineapple chunks (canned or fresh)
- 1 small onion, cut into chunks
- 1 cup jasmine or long-grain rice
- 2 cups water
Instructions
- In a medium saucepan, combine the rice, water, and a pinch of salt. Bring to a boil.
- Reduce the heat to low, cover, and simmer for about 10 minutes, or until the water is absorbed and the rice is tender.
- Season the chicken pieces with salt and pepper.
- Toss the chicken in cornstarch until evenly coated.
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the chicken and cook until golden brown and cooked through, about 5 minutes. Remove from the pan and set aside.
- In the same pan, add a bit more oil if needed.
- Add the onion, red bell pepper, and green bell pepper. Stir-fry for 2 minutes until the vegetables are tender-crisp.
- Add the pineapple chunks and cook for an additional 1 minute.
- In a bowl, whisk together the ketchup, rice vinegar, soy sauce, brown sugar, and pineapple juice.
- Pour the sauce mixture into the pan with the vegetables.
- Bring to a simmer and cook for 2 minutes until the sauce starts to thicken.
- Add the cooked chicken back into the pan and toss to coat with the sauce.
- Cook for an additional 1-2 minutes until everything is heated through.
- Serve the sweet and sour chicken over the cooked rice.
