Simple Sweet and Sour Chicken

You can’t beat a Simple Sweet and Sour Chicken for a midweek meal and this one is incredibly easy to cook up.

Ingredients

  • 450g chicken breast, cut into bite-sized pieces
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/2 cup pineapple juice (from canned pineapple chunks)
  • 1 tbsp cornstarch mixed with 2 tablespoons water
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1/2 cup pineapple chunks (canned or fresh)
  • 1 small onion, cut into chunks
  • 1 cup jasmine or long-grain rice
  • 2 cups water

Instructions

  1. In a medium saucepan, combine the rice, water, and a pinch of salt. Bring to a boil.
  2. Reduce the heat to low, cover, and simmer for about 10 minutes, or until the water is absorbed and the rice is tender.
  3. Season the chicken pieces with salt and pepper.
  4. Toss the chicken in cornstarch until evenly coated.
  5. Heat the vegetable oil in a large pan or wok over medium-high heat.
  6. Add the chicken and cook until golden brown and cooked through, about 5 minutes. Remove from the pan and set aside.
  7. In the same pan, add a bit more oil if needed.
  8. Add the onion, red bell pepper, and green bell pepper. Stir-fry for 2 minutes until the vegetables are tender-crisp.
  9. Add the pineapple chunks and cook for an additional 1 minute.
  10. In a bowl, whisk together the ketchup, rice vinegar, soy sauce, brown sugar, and pineapple juice.
  11. Pour the sauce mixture into the pan with the vegetables.
  12. Bring to a simmer and cook for 2 minutes until the sauce starts to thicken.
  13. Add the cooked chicken back into the pan and toss to coat with the sauce.
  14. Cook for an additional 1-2 minutes until everything is heated through.
  15. Serve the sweet and sour chicken over the cooked rice.
