Pistachio-Crusted Chicken with Honey Mustard Sauce and Rice
I’m nuts about this Pistachio-Crusted Chicken with Honey Mustard Sauce. Pistachios are one of my favourite snacks, so combining them with a sweet honey sauce is an absolute winner.

Ingredients
- 4 chicken breasts, sliced lengthways
- 1 cup shelled pistachios, finely chopped
- 1/2 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 2 tbsp olive oil
- 1/4 cup Dijon mustard
- 2 tbsp honey
- 1 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 cup jasmine rice
Instructions
- Cook the rice according to the package instructions.
- Preheat your air fryer to 190°C.
- In a food processor, pulse the pistachios until they are finely chopped but still have some texture. Mix the chopped pistachios with the panko breadcrumbs, garlic powder, onion powder, salt, and pepper in a shallow dish.
- In a small bowl, combine the Dijon mustard, honey, and olive oil.
- Brush each chicken breast with the mustard mixture, then press into the pistachio mixture to coat evenly.
- Place the coated chicken breasts in a single layer in the air fryer basket.
- Cook for 8 minutes, or until the chicken is cooked through and the crust is golden brown and crispy.
- In a small bowl, whisk together the Dijon mustard, honey, mayonnaise, lemon juice, salt, and pepper. Adjust seasoning to taste.
- Plate the cooked rice and place the pistachio-crusted chicken breasts on top.
- Drizzle the honey mustard sauce over the chicken or serve it on the side.
