Thai Basil Pork Stir-Fry with Noodles

Ingredients

  • 450g pork mince
  • 225g noodles
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2-3 Thai bird’s eye chillies, chopped
  • 1 cup fresh Thai basil leaves
  • 3 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar

Instructions

  1. Cook the rice noodles according to the package instructions. 
  2. In a small bowl, mix together the soy sauce, fish sauce, oyster sauce, dark soy sauce (if using), sugar, and water. Set aside.
  3. Heat the vegetable oil in a large pan or wok over medium-high heat.
  4. Add the minced garlic and chopped chillies. Stir-fry for about 30 seconds until fragrant.
  5. Add the pork mince and cook until it’s no longer pink, breaking it up into small pieces as it cooks.
  6. Add the sliced red bell pepper and onion to the pan. Stir-fry for about 2-3 minutes until the vegetables are slightly tender.
  7. Pour the sauce over the pork and vegetables. Stir well to combine.
  8. Add the cooked noodles to the pan and toss everything together to coat the noodles with the sauce.
  9. Stir in the fresh Thai basil leaves and cook for another 1-2 minutes until the basil is wilted and everything is heated through.
