Thai Basil Pork Stir-Fry with Noodles

Ingredients
- 450g pork mince
- 225g noodles
- 2 tbsp vegetable oil
- 4 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 2-3 Thai bird’s eye chillies, chopped
- 1 cup fresh Thai basil leaves
- 3 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 1 tsp sugar
Instructions
- Cook the rice noodles according to the package instructions.
- In a small bowl, mix together the soy sauce, fish sauce, oyster sauce, dark soy sauce (if using), sugar, and water. Set aside.
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and chopped chillies. Stir-fry for about 30 seconds until fragrant.
- Add the pork mince and cook until it’s no longer pink, breaking it up into small pieces as it cooks.
- Add the sliced red bell pepper and onion to the pan. Stir-fry for about 2-3 minutes until the vegetables are slightly tender.
- Pour the sauce over the pork and vegetables. Stir well to combine.
- Add the cooked noodles to the pan and toss everything together to coat the noodles with the sauce.
- Stir in the fresh Thai basil leaves and cook for another 1-2 minutes until the basil is wilted and everything is heated through.
