Stuffed Sweet Potatoes with Black Beans and Avocado

I absolutely love these Stuffed Sweet Potatoes with Black Beans and Avocado for a really simple dinner.

Ingredients

  • 4 medium sweet potatoes
  • 1 tbsp olive oil
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chilli powder
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh coriander, chopped
  • 1/4 cup crumbled feta cheese
  • 1 lime

Instructions

  1. Wash and dry the sweet potatoes. Pierce each sweet potato a few times with a fork.
  2. Place the sweet potatoes into the microwave and cook for 5 minutes, or until tender and easily pierced with a fork.
  3. In a large pan, heat the olive oil over medium heat.
  4. Add the finely chopped red onion and cook for about 5 minutes, or until softened.
  5. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
  6. Stir in the black beans, ground cumin, smoked paprika, chilli powder, salt, and pepper. Cook for about 2 minutes, until heated through.
  7. Once the sweet potatoes are cooked, let them cool slightly. Cut them in half lengthwise and carefully scoop out a bit of the flesh to create a small well in each half.
  8. Fill each sweet potato half with the black bean mixture.
  9. Top the stuffed sweet potatoes with diced avocado, halved cherry tomatoes, and chopped fresh coriander.
  10. Squeeze fresh lime juice over the top.
  11. Sprinkle with crumbled feta cheese.
