Stuffed Sweet Potatoes with Black Beans and Avocado
I absolutely love these Stuffed Sweet Potatoes with Black Beans and Avocado for a really simple dinner.

Ingredients
- 4 medium sweet potatoes
- 1 tbsp olive oil
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chilli powder
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh coriander, chopped
- 1/4 cup crumbled feta cheese
- 1 lime
Instructions
- Wash and dry the sweet potatoes. Pierce each sweet potato a few times with a fork.
- Place the sweet potatoes into the microwave and cook for 5 minutes, or until tender and easily pierced with a fork.
- In a large pan, heat the olive oil over medium heat.
- Add the finely chopped red onion and cook for about 5 minutes, or until softened.
- Add the minced garlic and cook for another 1-2 minutes, until fragrant.
- Stir in the black beans, ground cumin, smoked paprika, chilli powder, salt, and pepper. Cook for about 2 minutes, until heated through.
- Once the sweet potatoes are cooked, let them cool slightly. Cut them in half lengthwise and carefully scoop out a bit of the flesh to create a small well in each half.
- Fill each sweet potato half with the black bean mixture.
- Top the stuffed sweet potatoes with diced avocado, halved cherry tomatoes, and chopped fresh coriander.
- Squeeze fresh lime juice over the top.
- Sprinkle with crumbled feta cheese.
