- 1 large head of cauliflower, cut into florets
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 cup Greek yoghurt or sour cream
- 1-2 chipotle peppers in adobo sauce, finely chopped
- 1 tbsp lime juice
- 1 clove garlic, minced
- 8 small tortillas
- 1/4 cup chopped fresh coriander
- 1/4 cup diced red onion
- 1 avocado, sliced
- 1 lime
Instructions
- Preheat the air fryer to 200°C.
- In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, ground cumin, garlic powder, onion powder, salt, and pepper.
- Place the seasoned cauliflower in the air fryer basket in a single layer and cook for 10 minutes, shaking the basket halfway through, until the cauliflower is golden and crispy.
- In a small bowl, combine the Greek yoghurt or sour cream, finely chopped chipotle peppers, lime juice, minced garlic, and salt. Mix well until smooth. Adjust seasoning to taste.
- Warm the tortillas in a dry pan over medium heat for about 30 seconds on each side until pliable.
- Place a generous portion of the roasted cauliflower on each tortilla.
- Drizzle with chipotle sauce.
- Top with chopped fresh coriander, diced red onion, and avocado slices.
- Serve with lime wedges on the side.
