Roasted Cauliflower Tacos with Chipotle Sauce

Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 cup Greek yoghurt or sour cream
  • 1-2 chipotle peppers in adobo sauce, finely chopped
  • 1 tbsp lime juice
  • 1 clove garlic, minced
  • 8 small tortillas
  • 1/4 cup chopped fresh coriander
  • 1/4 cup diced red onion
  • 1 avocado, sliced
  • 1 lime

Instructions

  1. Preheat the air fryer to 200°C. 
  2. In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, ground cumin, garlic powder, onion powder, salt, and pepper.
  3. Place the seasoned cauliflower in the air fryer basket in a single layer and cook for 10 minutes, shaking the basket halfway through, until the cauliflower is golden and crispy.
  4. In a small bowl, combine the Greek yoghurt or sour cream, finely chopped chipotle peppers, lime juice, minced garlic, and salt. Mix well until smooth. Adjust seasoning to taste.
  5. Warm the tortillas in a dry pan over medium heat for about 30 seconds on each side until pliable. 
  6. Place a generous portion of the roasted cauliflower on each tortilla.
  7. Drizzle with chipotle sauce.
  8. Top with chopped fresh coriander, diced red onion, and avocado slices.
  9. Serve with lime wedges on the side.
