Pomegranate and Quinoa Salad with Feta

Ingredients
- 1 cup quinoa
- 2 cups water or vegetable stock
- 1 cup pomegranate seeds
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped walnuts or almonds
- 1/4 cup finely chopped red onion
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tbsp red wine vinegar
- 1 tsp honey or maple syrup
- 1 clove garlic, minced
Instructions
- Rinse the quinoa under cold water.
- In a medium saucepan, combine the quinoa and water (or vegetable stock).
- Bring to a boil, then reduce the heat to low, cover, and simmer for about 8 minutes, or until the quinoa is tender and the water is absorbed.
- Remove from heat and let it sit, covered, for 2 minutes. Fluff with a fork and let it cool to room temperature.
- In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, honey, minced garlic, salt, and pepper.
- In a large bowl, combine the cooked quinoa, pomegranate seeds, crumbled feta cheese, chopped parsley, chopped mint, chopped walnuts or almonds and finely chopped red onion.
- Pour the dressing over the salad and toss to combine.
