Spicy Thai Peanut Noodles

Ingredients

  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp sriracha
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 225g rice noodles or spaghetti
  • 1 tbsp vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup snap peas, trimmed
  • 2 spring onions, sliced
  • 1/4 cup chopped coriander
  • 1/4 cup chopped peanuts
  • 1 lime

Instructions

  1. Cook the rice noodles or spaghetti according to the package instructions until al dente. 
  2. In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey or maple syrup, sriracha, minced garlic, grated ginger, and warm water until smooth. Adjust the consistency with more water if needed.
  3. In a large pan or wok, heat the vegetable oil over medium-high heat.
  4. Add the sliced red bell pepper, julienned carrot, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  5. Add the cooked noodles to the pan with the vegetables.
  6. Pour the peanut sauce over the noodles and toss to combine, ensuring everything is well coated.
  7. Transfer the spicy Thai peanut noodles to serving plates and garnish with sliced spring onions, chopped coriander and chopped peanuts.
