Pear and Gorgonzola Flatbread

Ingredients

  • 1 pre-made flatbread
  • 1 large pear, thinly sliced
  • 1/2 cup crumbled Gorgonzola cheese
  • 1/4 cup chopped walnuts
  • 1/4 cup rocket
  • 1 tbsp olive oil
  • 1 tbsp honey
  • fresh thyme leaves

Instructions

  1. Preheat your oven to 220°C.
  2. Place the flatbread on a baking sheet and brush with olive oil.
  3. Arrange the thinly sliced pear evenly over the flatbread.
  4. Sprinkle the crumbled Gorgonzola cheese and chopped walnuts over the pears.
  5. Season with a little salt and pepper.
  6. Bake in the oven for 8 minutes or until the cheese is melted and the flatbread is golden and crispy.
  7. Remove the flatbread from the oven.
  8. Drizzle honey over the top.
  9. Scatter fresh rocket over and garnish with fresh thyme leaves.
