Spicy Korean Beef Bowls

Ingredients
- 450g minced beef
- 1 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1/4 cup soy sauce
- 2 tbsp gochujang (Korean chilli paste)
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1/2 tbsp ground ginger
- 2 cups cooked rice
- 1 cup shredded carrots
- 1 cup cucumber, thinly sliced
- 1/2 cup kimchi
- 2 spring onions, sliced
- 1 tbsp sesame seeds
- fresh coriander or parsley, for garnish
Instructions
- Heat the vegetable oil in a large pan over medium-high heat.
- Add the finely chopped onion and cook until translucent, about 2 minutes.
- Add the minced garlic and cook for another 1 minute until fragrant.
- Add the ground beef to the pan and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
- In a small bowl, mix together the soy sauce, gochujang, brown sugar, sesame oil, rice vinegar, ground ginger, salt, and pepper.
- Pour the sauce over the cooked beef and stir to combine.
- Let the mixture simmer for 2-3 minutes until the beef is well-coated and the sauce has slightly thickened.
- Divide the cooked rice among bowls.
- Top each bowl with a portion of the spicy Korean beef.
- Add shredded carrots, thinly sliced cucumber, and kimchi to each bowl.
- Sprinkle with sliced spring onions and sesame seeds.
- Garnish with fresh coriander or parsley.
