Spinach and Goat Cheese Quesadillas

These Spinach and Goat Cheese Quesadillas are perfection on a plate and will brighten up any midweek meal.

Ingredients

  • 4 large flour tortillas
  • 2 cups fresh spinach leaves
  • 115g goat cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • 1/2 red onion, thinly sliced
  • 1 clove garlic, minced
  • salsa, sour cream, or guacamole for serving

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the fresh spinach leaves and cook until wilted, about 2-3 minutes.
  4. Season with salt and pepper to taste.
  5. Remove from heat and set aside.
  6. Lay out half of the flour tortillas on a flat surface.
  7. Evenly distribute the sautéed spinach over the tortillas.
  8. Sprinkle the crumbled goat cheese and shredded mozzarella cheese over the spinach.
  9. Add the thinly sliced red onion on top.
  10. Place the remaining tortillas on top to form quesadillas.
  11. Carefully transfer one quesadilla to the pan on medium heat.
  12. Cook for about 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted.
  13. Cut each quesadilla into quarters and serve with salsa, sour cream, or guacamole.
