Ingredients
- 340g pasta
- 2 ripe avocados, peeled and pitted
- 1/4 cup fresh basil leaves
- 2 cloves garlic
- 2 tbsp lemon juice
- 1/4 cup olive oil
- 1/4 cup grated Parmesan cheese
- 1/2 cup cherry tomatoes, halved
- fresh basil leaves, for garnish
Instructions
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to the package instructions until al dente.
- Reserve 1/2 cup of the pasta water, then drain the pasta.
- In a food processor or blender, combine the avocados, fresh basil leaves, garlic, lemon juice, and olive oil.
- Blend until smooth and creamy. If the sauce is too thick, add a bit of the reserved pasta water.
- Season with salt and pepper to taste.
- In a large bowl, toss the cooked pasta with the creamy avocado sauce until well coated.
- If using, sprinkle with grated Parmesan cheese and toss again to combine.
- Divide the creamy avocado pasta among serving plates.
- Garnish with halved cherry tomatoes and fresh basil leaves.
