I’ve been really enjoying this Courgetti With Pesto and Cherry Tomatoes for a simple midweek meal.

Ingredients

  • 4 medium courgettes, spiralised into noodles
  • 1 tbsp olive oil
  • 3 cups fresh basil leaves, packed
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup pine nuts
  • 2 cloves garlic, minced
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste
  • 1 tbsp lemon juice
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a food processor, combine the basil leaves, grated Parmesan cheese, pine nuts, and minced garlic. Pulse until the ingredients are finely chopped.
  2. With the food processor running, slowly drizzle in the olive oil until the mixture is smooth and well combined.
  3. Season with salt and pepper to taste. Add lemon juice. Set aside.
  4. Heat the olive oil in a large pan over medium heat.
  5. Add the spiralised courgette noodles and sauté for 2-3 minutes, until they are just tender but still have a slight crunch.
  6. Season with salt and pepper to taste. Remove from heat.
  7. In a large bowl, toss the sautéed noodles with the homemade pesto until they are well coated.
  8. Add the halved cherry tomatoes and gently toss to combine.
  9. Top with additional grated Parmesan cheese and garnish with fresh basil leaves.
