Ingredients
- 4 cod fillets
- 2 tbsp harissa paste
- 1 tbsp olive oil
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- fresh coriander, chopped (for garnish)
- 1 lemon, juice and wedges
Instructions
- In a small bowl, mix the harissa paste, olive oil, lemon juice, salt, and pepper.
- Rub the mixture over the cod fillets, ensuring they are evenly coated.
- Heat a large frying pan over medium-high heat and add 1 tablespoon of olive oil.
- Add the cod fillets to the pan and cook for 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove the cod from the pan and set aside.
- Add the chopped red onion, diced red bell pepper, minced garlic, ground cumin, ground coriander, and smoked paprika. Cook for another 1-2 minutes until fragrant.
- Add the chickpeas to the pan, stirring to combine. Cook until the chickpeas are heated through, about 3 minutes.
- Season with salt and pepper to taste.
- Divide the chickpea mixture among serving plates and place a cooked harissa cod fillet on top of the chickpeas.
- Garnish with chopped fresh coriander and serve with lemon wedges on the side.
