Harissa Cod And Chickpeas

My Harissa Cod And Chickpeas recipe is a great meal for any night of the week if you like amazing flavour.

Ingredients

  • 4 cod fillets 
  • 2 tbsp harissa paste
  • 1 tbsp olive oil
  • 1 can chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • fresh coriander, chopped (for garnish)
  • 1 lemon, juice and wedges

Instructions

  1. In a small bowl, mix the harissa paste, olive oil, lemon juice, salt, and pepper.
  2. Rub the mixture over the cod fillets, ensuring they are evenly coated.
  3. Heat a large frying pan over medium-high heat and add 1 tablespoon of olive oil.
  4. Add the cod fillets to the pan and cook for 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove the cod from the pan and set aside.
  5. Add the chopped red onion, diced red bell pepper, minced garlic, ground cumin, ground coriander, and smoked paprika. Cook for another 1-2 minutes until fragrant.
  6. Add the chickpeas to the pan, stirring to combine. Cook until the chickpeas are heated through, about 3 minutes.
  7. Season with salt and pepper to taste.
  8. Divide the chickpea mixture among serving plates and place a cooked harissa cod fillet on top of the chickpeas.
  9. Garnish with chopped fresh coriander and serve with lemon wedges on the side.
