Moroccan Spiced Carrot Salad

This Moroccan Spiced Carrot Salad is a great choice for a lunchtime meal that is super simple but packed with Moroccan flavour.

Ingredients

  • 4 large carrots, peeled and grated or julienned
  • 1/4 cup raisins
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh coriander
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup crumbled feta cheese
  • 3 tbsp olive oil
  • 1 lemon
  • 1 tbsp honey
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground paprika
  • 1/4 tsp ground ginger
  • 1/4 tsp ground coriander

Instructions

  1. Place the grated carrots in a large salad bowl.
  2. Add the raisins, chopped fresh parsley, chopped fresh coriander, and toasted sliced almonds to the bowl with the carrots.
  3. Add the crumbled feta cheese.
  4. In a small bowl, whisk together the olive oil, fresh lemon juice, honey, ground cumin, ground cinnamon, ground paprika, ground ginger, ground coriander, salt, and pepper until well combined.
  5. Pour the dressing over the carrot mixture.
  6. Toss well to coat all the ingredients evenly with the dressing.
