Sriracha Lime Salmon Tacos

  1. In a bowl, whisk together the olive oil, 2 tbsp sriracha sauce, lime juice, lime zest, minced garlic, salt, and pepper.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the salmon is well-coated.
  3. Heat a pan over medium-high heat and place the salmon into the pan.
  4. Cook the salmon for about 4 minutes on each side or until fully cooked and flaky.
  5. Remove the salmon from the pan and let it rest for a few minutes before flaking it into bite-sized pieces.
  6. In a small bowl, mix together the Greek yoghurt, 1 tbsp sriracha sauce, lime juice, and a pinch of salt. Stir until well combined and smooth.
  7. Warm the corn tortillas in a dry pan over medium heat until they are pliable.
  8. Place a generous amount of flaked salmon on each tortilla, then top with shredded red cabbage, sliced radishes, avocado slices, and chopped fresh coriander.
  9. Drizzle with the sriracha lime sauce and serve the tacos with lime wedges on the side.
