Sriracha Lime Salmon Tacos

Ingredients
- 2 salmon fillets
- 2 tbsp olive oil
- 3 tbsp sriracha sauce
- 1 lime
- 2 cloves garlic, minced
- 8 small tortillas
- 1 cup shredded red cabbage
- 1/2 cup sliced radishes
- 1 avocado, sliced
- 1/4 cup chopped fresh coriander
- 1/2 cup Greek yoghurt
Instructions
- In a bowl, whisk together the olive oil, 2 tbsp sriracha sauce, lime juice, lime zest, minced garlic, salt, and pepper.
- Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the salmon is well-coated.
- Heat a pan over medium-high heat and place the salmon into the pan.
- Cook the salmon for about 4 minutes on each side or until fully cooked and flaky.
- Remove the salmon from the pan and let it rest for a few minutes before flaking it into bite-sized pieces.
- In a small bowl, mix together the Greek yoghurt, 1 tbsp sriracha sauce, lime juice, and a pinch of salt. Stir until well combined and smooth.
- Warm the corn tortillas in a dry pan over medium heat until they are pliable.
- Place a generous amount of flaked salmon on each tortilla, then top with shredded red cabbage, sliced radishes, avocado slices, and chopped fresh coriander.
- Drizzle with the sriracha lime sauce and serve the tacos with lime wedges on the side.
