Ingredients
- 1 cup orzo pasta
- 1 lemon
- 1/4 cup fresh basil, chopped
- 1 courgette, sliced
- 1 yellow courgette, sliced
- 1 red bell pepper, cut into strips
- 1 bunch of asparagus, trimmed
Instructions
- Bring a large pot of salted water to a boil. Add orzo and cook according to package instructions until al dente, usually about 7-9 minutes.
- Preheat a griddle pan on a medium-high heat.
- Toss the courgette, yellow squash, red bell pepper, and asparagus with olive oil, salt, and pepper.
- Grill the vegetables, turning occasionally, until they are tender and have nice grill marks, about 5-7 minutes.
- Once grilled, let them cool slightly and then chop into bite-sized pieces.
- Add the grilled vegetables to the bowl with the orzo.
- Add lemon zest, lemon juice, chopped basil, and olive oil. Toss to combine everything thoroughly.
- Season with salt and pepper to taste.
- Serve the orzo salad garnished with additional fresh basil and a drizzle of olive oil.
