Spicy Chipotle Chicken Tacos

Ingredients
- 450g chicken breasts, thinly sliced or shredded
- 2 tbsp chipotle peppers, finely chopped
- 1 tsp garlic powder
- 1 tsp cumin
- 8-10 small tortillas, warmed
- 1 red cabbage, shredded
- 1 avocado, sliced
- 1 red onion, thinly sliced
- fresh coriander, chopped
- 1 lime, in wedges
- sour cream
Instructions
- In a bowl, combine the sliced chicken with chipotle peppers, garlic powder, cumin, olive oil, salt, and pepper. Mix well to ensure the chicken is thoroughly coated. If you’ve got extra time, let the chicken marinate for at least 10 minutes, or longer if time allows.
- Heat a pan over medium-high heat. Add the chicken and cook for 5-7 minutes or until fully cooked and slightly charred on the edges.
- While the chicken is cooking, prepare the toppings: shred the cabbage, slice the avocado and red onion, and chop the cilantro.
- Warm the tortillas on a pan or directly over a flame for a few seconds on each side until soft and pliable.
- To assemble, place a few pieces of cooked chicken on each tortilla. Top with shredded cabbage, avocado slices, and red onion. Add a dollop of sour cream.
- Garnish the tacos with chopped coriander and serve with lime wedges on the side.
