Greek Salad with Grilled Halloumi

Ingredients

  • 225g halloumi cheese, sliced
  • 2 medium cucumbers, diced
  • 3 large tomatoes, diced
  • 1 small red onion, thinly sliced
  • 1/2 cup olives, pitted
  • 1 green bell pepper, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 lemon
  • 1 tsp dried oregano
  • 1 garlic clove, minced

Instructions

  1. In a large mixing bowl, combine diced cucumbers, tomatoes, red onion, kalamata olives, and green bell pepper. Toss these ingredients together.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and pepper. Adjust seasoning to taste.
  3. Pour the dressing over the salad and toss to coat all the vegetables evenly. Let it sit for a few minutes to marinate.
  4. Heat a grill pan over medium-high heat. Brush the halloumi slices lightly with olive oil.
  5. Grill the halloumi for 2-3 minutes on each side or until golden brown.
  6. Add the grilled halloumi slices to the top of the salad and sprinkle crumbled feta cheese over the salad.
