Courgette and Goat Cheese Frittata

Ingredients

  • 6 large eggs
  • 2 medium courgettes, sliced
  • 1 cup goat cheese, crumbled
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • handful of fresh herbs, chopped (parsley, chives and/or basil)
  • 1/4 cup milk
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, whisk together the eggs, milk, and half of the chopped herbs. Season with salt and pepper. Set aside.
  2. Heat olive oil in a medium non-stick frying pan over medium heat.
  3. Add the chopped onion and sauté until translucent, about 2 minutes.
  4. Add the minced garlic and sliced courgette. Cook, stirring occasionally, until the courgette is just tender, about 3 minutes. Season with salt and pepper.
  5. Reduce the heat to low. Pour the egg mixture over the cooked courgette in the pan, ensuring the eggs cover the vegetables evenly.
  6. Add the crumbled goat cheese.
  7. Cover the pan with a lid and let the frittata cook gently. Allow it to set around the edges but remain slightly runny on top, about 5 minutes.
  8. Once the frittata is fully set and the goat cheese is slightly melted, sprinkle the remaining herbs over the top.
  9. Slide the frittata onto a plate, cut into wedges, and serve.
