Courgette and Goat Cheese Frittata

Ingredients
- 6 large eggs
- 2 medium courgettes, sliced
- 1 cup goat cheese, crumbled
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- handful of fresh herbs, chopped (parsley, chives and/or basil)
- 1/4 cup milk
- 2 tbsp olive oil
Instructions
- In a large bowl, whisk together the eggs, milk, and half of the chopped herbs. Season with salt and pepper. Set aside.
- Heat olive oil in a medium non-stick frying pan over medium heat.
- Add the chopped onion and sauté until translucent, about 2 minutes.
- Add the minced garlic and sliced courgette. Cook, stirring occasionally, until the courgette is just tender, about 3 minutes. Season with salt and pepper.
- Reduce the heat to low. Pour the egg mixture over the cooked courgette in the pan, ensuring the eggs cover the vegetables evenly.
- Add the crumbled goat cheese.
- Cover the pan with a lid and let the frittata cook gently. Allow it to set around the edges but remain slightly runny on top, about 5 minutes.
- Once the frittata is fully set and the goat cheese is slightly melted, sprinkle the remaining herbs over the top.
- Slide the frittata onto a plate, cut into wedges, and serve.
