Smoked Salmon and Avocado Toast

It’s a classic but I’m a huge fan of this Smoked Salmon and Avocado Toast. Perfect for a really easy meal, whether breakfast or dinner.

Ingredients

  • 4 bread slices (such as sourdough or multigrain)
  • 2 ripe avocados
  • 1 lemon
  • 200 grams smoked salmon
  • 1 small red onion, thinly sliced
  • 2 tbsp capers
  • fresh dill, for garnish
  • 2 tbsp cream cheese

Instructions

  1. Peel and pit the avocados. In a bowl, mash the avocados with a fork until smooth.
  2. Mix in lemon juice, and season with salt and pepper to taste. Set aside.
  3. Toast the bread slices in a toaster until golden and crispy.
  4. Spread a thin layer of cream cheese on each slice of toasted bread.
  5. Spread a generous layer of the avocado mixture on top of the cream cheese.
  6. Arrange slices of smoked salmon over the avocado.
  7. Scatter thinly sliced red onion and capers over the smoked salmon.
  8. Garnish with sprigs of fresh dill.
