Sweet and Sour Aubergine Stir-Fry

Ingredients

  • 2 medium-sized aubergines, cut into bite-sized pieces
  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 2 garlic cloves, minced
  • 1-inch ginger piece, finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tbsp sugar
  • 1 tsp cornstarch, dissolved in 2 tbsp water
  • 2 tsp sesame oil
  • spring onions, chopped for garnish
  • sesame seeds, for garnish
  • 200g noodles

Instructions

  1. Cook the noodles according to the package instructions.
  2. Sprinkle the aubergine pieces with a little salt and let them sit for a few minutes to draw out moisture. Pat dry with paper towels.
  3. In a small bowl, combine soy sauce, vinegar, sugar, and the cornstarch mixture. Stir well until the sugar is dissolved and the mixture is smooth.
  4. Heat vegetable oil in a large pan or wok over medium-high heat.
  5. Add the aubergine and fry until they start to soften and brown, about 5 minutes. Remove and set aside.
  6. In the same pan, add a bit more oil if needed, and sauté onions, bell peppers, garlic, and ginger until the onions become translucent and peppers soften slightly, about 3 minutes.
  7. Return the aubergine to the pan with the other vegetables.
  8. Pour the sauce mixture over the vegetables and stir well to combine. Cook for another 2-3 minutes, stirring frequently, until the sauce thickens and the vegetables are well-coated.
  9. Add the cooked noodles to the pan, tossing everything together to ensure the noodles are evenly coated with the sauce and mixed with the vegetables.
  10. Drizzle sesame oil over the dish and mix thoroughly.
  11. Garnish with chopped spring onions and sesame seeds.
