  1. In a small bowl, whisk together the miso paste, mirin, soy sauce, brown sugar, and sesame oil until smooth. Set aside.
  2. Preheat your oven to 200°C.
  3. Pat the cod fillets dry with paper towels and season lightly with salt and pepper.
  4. Heat olive oil in an oven-safe pan over medium-high heat. Sear the cod fillets for about 2 minutes on one side until golden.
  5. Flip the cod fillets, brush them generously with the miso glaze, and transfer the pan to the oven or use an oven dish.
  6. Bake for about 7 minutes, or until the cod is cooked through and flakes easily with a fork.
  7. While the cod is baking, heat sesame oil in a separate pan over medium heat.
  8. Add minced garlic and grated ginger, sautéing briefly until fragrant.
  9. Place the halved bok choy in the pan, cut side down, and cook for about 2-3 minutes until the bok choy starts to wilt.
  10. Flip the bok choy, cover the pan, and let it steam for an additional 2-3 minutes until tender.
  11. Arrange the cooked bok choy on plates. Place a piece of miso 1glazed cod on top of the bok choy.
  12. Drizzle any remaining miso glaze from the pan over the cod.
