Creamy Dijon Mushroom Toast

Ingredients
- 450g mixed mushrooms, sliced
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp Dijon mustard
- 1 tsp thyme
- 1/2 cup heavy cream
- 4 slices of crusty bread, toasted
- fresh parsley, chopped
- grated Parmesan cheese
Instructions
- Heat olive oil in a large pan over medium heat then add the onions and garlic, sautéing until the onions become translucent.
- Increase the heat to medium-high and add the sliced mushrooms. Cook until the mushrooms are golden and have released their moisture.
- Reduce the heat to medium. Stir in the Dijon mustard and thyme, cooking for about a minute to blend the flavours.
- Pour in the heavy cream, stirring continuously until the sauce thickens slightly. Season with salt and pepper to taste.
- Place the toasted bread slices on plates and spoon the creamy mushroom mixture generously over each slice of toast.
- Sprinkle chopped parsley over the mushrooms and add a light sprinkle of grated Parmesan cheese.
