Creamy Dijon Mushroom Toast

The Creamy Dijon Mushroom Toast is a perfect light meal for when you’re short on time but still want amazing flavour.

Ingredients

  • 450g mixed mushrooms, sliced
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tsp thyme
  • 1/2 cup heavy cream
  • 4 slices of crusty bread, toasted
  • fresh parsley, chopped
  • grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pan over medium heat then add the onions and garlic, sautéing until the onions become translucent.
  2. Increase the heat to medium-high and add the sliced mushrooms. Cook until the mushrooms are golden and have released their moisture.
  3. Reduce the heat to medium. Stir in the Dijon mustard and thyme, cooking for about a minute to blend the flavours.
  4. Pour in the heavy cream, stirring continuously until the sauce thickens slightly. Season with salt and pepper to taste.
  5. Place the toasted bread slices on plates and spoon the creamy mushroom mixture generously over each slice of toast.
  6. Sprinkle chopped parsley over the mushrooms and add a light sprinkle of grated Parmesan cheese.
