Smoked Salmon and Avocado Rice Bowl

My Smoked Salmon and Avocado Rice Bowl is a refreshing and nutritious dish that combines the rich flavours of smoked salmon with creamy avocado and a base of fluffy rice.

Ingredients

  • 1 cup white rice
  • 200g smoked salmon, thinly sliced
  • 1 large avocado, peeled, pitted, and sliced
  • 1/2 cucumber, thinly sliced
  • 1 small radish, thinly sliced
  • 1 small red onion, finely chopped
  • 1 tbsp sesame seeds
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp honey
  • 1 tsp wasabi paste
  • fresh coriander, chopped

Instructions

  1. Cook the rice according to the package instructions, bring to a boil, then cover and reduce to a simmer for 10 minutes.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, and wasabi paste until well combined. Set aside.
  3. Fluff the cooked rice and divide it among bowls.
  4. Arrange the smoked salmon, avocado slices, cucumber, radish, and red onion over the rice.
  5. Sprinkle with sesame seeds and drizzle the dressing over each bowl.
  6. Garnish with chopped coriander.
