  • 340g spaghetti or tagliatelle
  • 1 cup ricotta cheese
  • 1 lemon
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 cups fresh spinach
  • extra virgin olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water.
  2. In a bowl, combine ricotta cheese, lemon zest, lemon juice, and Parmesan cheese. Whisk in olive oil until the mixture is smooth and creamy. Season with salt and pepper to taste.
  3. Pour the lemon ricotta mixture over the drained pasta in the pot. Toss gently to coat the pasta evenly, adding reserved pasta water a little at a time to achieve a creamy consistency.
  4. Add fresh spinach to the pasta and stir until the spinach wilts and is evenly distributed throughout the pasta.
  5. Serve the pasta drizzled with a little extra virgin olive oil and additional Parmesan cheese sprinkled on top.
