Chilli Lime Prawn Tacos

Ingredients
- 450g prawns, peeled and deveined
- 1 tbsp chilli powder
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1 lime
- 1 cabbage, shredded
- 1 carrot, shredded
- 1/4 cup coriander, chopped
- 1 tsp honey
- 1 ripe avocado
- 2 tbsp Greek yoghurt
- 8 small tortillas
Instructions
- In a bowl, combine olive oil, chilli powder, garlic powder, cumin, lime juice, lime zest, salt, and pepper. Add the prawns and toss to coat. Marinate for 5 minutes.
- In another bowl, mix together shredded cabbage, carrot, coriander, lime juice, honey, and salt.
- In a blender, combine the avocado, Greek yoghurt, lime juice, minced garlic, and salt. Blend until smooth. If the sauce is too thick, add a little water.
- Heat a large pan over medium-high heat. Add the marinated prawns and cook for 2-3 minutes on each side or until fully cooked.
- Warm tortillas in a pan or on a grill for about 30 seconds on each side or until they are heated through and slightly charred.
- On each tortilla, lay slaw, top with a few prawns, drizzle with avocado lime sauce and garnish with fresh coriander.
- Serve with lime wedges on the side.
