Spicy Sausage and Peppers Pasta

Ingredients

  • 450g pasta (rigatoni or penne)
  • 450g spicy Italian sausage, sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 can chopped tomatoes
  • 1 tsp red chilli flakes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 cup fresh basil, chopped
  • 1/2 cup grated Parmesan cheese
  • olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and set aside, reserving about 1 cup of the pasta water to adjust the sauce consistency later.
  2. In a large pan over medium heat, add a splash of olive oil. Add the spicy Italian sausage to the pan and cook until browned.
  3. In the same pan, add the sliced onions and bell peppers. Sauté until they begin to soften and brown slightly, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Add the chopped tomatoes, red chilli flakes, oregano, and basil. Stir well to combine and simmer the sauce for about 3 minutes. Season with salt and pepper to taste.
  5. Add the cooked pasta to the pan with the sausage and pepper sauce. Toss to coat evenly. If the sauce is too thick, add the reserved pasta water.
  6. Stir in the chopped fresh basil and half of the grated Parmesan cheese.
  7. Serve with the remaining Parmesan cheese sprinkled on top.
