Spicy Sausage and Peppers Pasta

Ingredients
- 450g pasta (rigatoni or penne)
- 450g spicy Italian sausage, sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1 can chopped tomatoes
- 1 tsp red chilli flakes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/4 cup fresh basil, chopped
- 1/2 cup grated Parmesan cheese
- olive oil
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and set aside, reserving about 1 cup of the pasta water to adjust the sauce consistency later.
- In a large pan over medium heat, add a splash of olive oil. Add the spicy Italian sausage to the pan and cook until browned.
- In the same pan, add the sliced onions and bell peppers. Sauté until they begin to soften and brown slightly, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the chopped tomatoes, red chilli flakes, oregano, and basil. Stir well to combine and simmer the sauce for about 3 minutes. Season with salt and pepper to taste.
- Add the cooked pasta to the pan with the sausage and pepper sauce. Toss to coat evenly. If the sauce is too thick, add the reserved pasta water.
- Stir in the chopped fresh basil and half of the grated Parmesan cheese.
- Serve with the remaining Parmesan cheese sprinkled on top.
