Chorizo and White Bean Stew

Ingredients
- 450g chorizo sausage, sliced into rounds
- 2 cans white beans (such as cannellini), drained and rinsed
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can diced tomatoes, with juice
- 1 tbsp tomato paste
- 2 cups chicken stock
- 2 cups fresh spinach leaves
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 2 tbsp olive oil
- fresh parsley, chopped
Instructions
- In a large pot, heat the olive oil over medium-high heat. Add the chorizo slices and cook until they are browned and crispy, about 2 minutes. Remove the chorizo from the pot and set aside.
- In the same pot, add the chopped onion, carrots, and celery. Sauté until the vegetables begin to soften, about 2 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced tomatoes with their juice, tomato paste, chicken broth, smoked paprika, and thyme. Bring the mixture to a simmer.
- Add the drained white beans and return the chorizo to the pot. Let the stew simmer for about 5 minutes to blend the flavors together. Season with salt and pepper to taste.
- A few minutes before serving, add the fresh spinach leaves and stir until wilted.
- Ladle the stew into bowls and garnish with chopped fresh parsley.
