Chorizo and White Bean Stew

Ingredients

  • 450g chorizo sausage, sliced into rounds
  • 2 cans white beans (such as cannellini), drained and rinsed
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can diced tomatoes, with juice
  • 1 tbsp tomato paste
  • 2 cups chicken stock
  • 2 cups fresh spinach leaves
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • fresh parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the chorizo slices and cook until they are browned and crispy, about 2 minutes. Remove the chorizo from the pot and set aside.
  2. In the same pot, add the chopped onion, carrots, and celery. Sauté until the vegetables begin to soften, about 2 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the diced tomatoes with their juice, tomato paste, chicken broth, smoked paprika, and thyme. Bring the mixture to a simmer.
  5. Add the drained white beans and return the chorizo to the pot. Let the stew simmer for about 5 minutes to blend the flavors together. Season with salt and pepper to taste.
  6. A few minutes before serving, add the fresh spinach leaves and stir until wilted.
  7. Ladle the stew into bowls and garnish with chopped fresh parsley.
