Prosciutto Wrapped Asparagus with Balsamic Glaze

When Asparagus is in season in the UK (April/May), this simple Prosciutto Wrapped Asparagus with Balsamic Glaze recipe is a great option for a weekly meal choice.

Ingredients

  • 16 fresh asparagus spears, trimmed
  • 8 slices of prosciutto
  • 2 tbsp olive oil
  • 1/2 cup balsamic vinegar
  • 2 tbsp brown sugar
  • Parmesan cheese, grated
  • 1 lemon

Instructions

  1. Preheat your oven to 200 degrees C.
  2. Wash the asparagus and trim off the tough bottoms of the spears.
  3. Blanche the asparagus in boiling water for 2 minutes to slightly soften.
  4. While they’re cooking, cut the prosciutto strips in half lengthwise to make them thinner.
  5. After 2 minutes, immediately plunge them into ice water to stop the cooking process.
  6. Wrap each asparagus spear with a strip of prosciutto. The prosciutto should be snug but not overly tight. Repeat this process until all the asparagus spears are wrapped.
  7. Arrange the wrapped spears on a baking tray and drizzle with olive oil and lightly season with pepper.
  8. Roast in the preheated oven for about 8 minutes, or until the prosciutto is crisp and the asparagus is tender.
  9. While the asparagus is in the oven, pour the balsamic vinegar and brown sugar into a small saucepan.
  10. Bring to a simmer over medium-low heat, stirring constantly until the sugar has dissolved.
  11. Continue to simmer until the glaze is reduced by half and thickened to a syrup-like consistency. Be careful not to burn it.
  12. Remove the asparagus from the oven and allow it to cool slightly.
  13. Drizzle the balsamic glaze over the wrapped asparagus then garnish with grated Parmesan and a squeeze of lemon.
