Creamy Goat Cheese and Spinach Pasta

Ingredients
- 450g pasta
- 110g goat cheese
- 1 cup heavy cream
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 6 cups fresh spinach leaves
- 1 tsp lemon zest
- 2 tbsp lemon juice
- pinch of nutmeg
- fresh basil, roughly chopped
- red pepper flakes
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
- While the pasta cooks, heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another 1-2 minutes until fragrant.
- Gradually add spinach to the pan, stirring until wilted.
- Lower the heat and add the goat cheese and heavy cream to the pan. Stir until the goat cheese is melted and the sauce is creamy.
- Add lemon zest, lemon juice, a pinch of nutmeg, salt, and black pepper. Stir well to combine.
- Add the drained pasta to the pan with the creamy sauce. Toss to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water.
- Serve the pasta with chopped basil, additional crumbled goat cheese, and red pepper flakes.
