Creamy Goat Cheese and Spinach Pasta

Ingredients

  • 450g pasta
  • 110g goat cheese
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 6 cups fresh spinach leaves
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • pinch of nutmeg
  • fresh basil, roughly chopped
  • red pepper flakes

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
  2. While the pasta cooks, heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for another 1-2 minutes until fragrant.
  4. Gradually add spinach to the pan, stirring until wilted.
  5. Lower the heat and add the goat cheese and heavy cream to the pan. Stir until the goat cheese is melted and the sauce is creamy.
  6. Add lemon zest, lemon juice, a pinch of nutmeg, salt, and black pepper. Stir well to combine.
  7. Add the drained pasta to the pan with the creamy sauce. Toss to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water.
  8. Serve the pasta with chopped basil, additional crumbled goat cheese, and red pepper flakes.
