Feta and Spinach Omelette
The Feta and Spinach Omelette is a really easy meal to make and works well for a hearty dinner when time is limited.

Ingredients
- 3 large eggs
- 1 cup fresh spinach
- 1/4 cup crumbled feta cheese
- 1 onion, finely diced
- 1 tbsp olive oil
Instructions
- Heat a tablespoon of olive oil in a non-stick frying pan over medium heat. Add the diced onions and sauté for about 2 minutes.
- Add the spinach to the pan. Cook, stirring occasionally, until the spinach has wilted and reduced in size, about 1-2 minutes. Season lightly with salt and pepper.
- While the spinach is wilting, crack the eggs into a bowl. Add a pinch of salt and some freshly ground black pepper. Beat the eggs well with a fork or a whisk until they are fully combined and slightly frothy.
- Spread the spinach and onion mixture evenly across the bottom of the pan. Pour the beaten eggs over the spinach. Tilt the pan as needed to ensure the eggs evenly coat the bottom of the pan.
- Sprinkle the crumbled feta cheese evenly over the top of the egg mixture. Cover the pan with a lid to help the top of the omelette set, cooking for about 2-3 minutes.
- Once the eggs are set, use a spatula to gently fold half of the omelette over onto itself, forming a semi-circle. Let it cook for another 30 seconds to ensure it’s fully cooked through.
- Serve with a little extra crumbled feta and a few fresh spinach leaves.
